Garlicky Sautéed Broccoli or Broccolini

Cook Time: 15 Minutes

Ingredients

1 bunch broccoli or broccolini, trimmed and cut to desired size

3-4 cloves garlic (depending on size and preference), sliced

Pinch red pepper flakes (or more depending on preference)

3 tablespoons of extra virgin olive oil

1 tablespoon roughly chopped italian (flat-leaf) parsley

Salt

Pepper


Instructions:

Bring pot of water to a rolling boil. Add liberal amount of salt to water once a boil is reached - there should be enough salt in the water so that it tastes like the sea.

At the same time, heat olive oil in a pan over medium heat. Add garlic and saute until the garlic begins to turn a light, golden brown. Add red pepper flakes. Lower the heat slightly.

Add broccoli or broccolini to the boiling water. Cook for two minutes. This will quickly cook the broccoli, while also seasoning it.

Use a slotted spoon to transfer the broccoli immediately to the pan. Add parsley. Saute for 30 seconds.

Transfer to a plate and finish with a drizzle of extra virgin olive oil. Season with salt, pepper (and red pepper flakes if so desired) to taste. Serve.
